Novruz in Azerbaijan is referred to as Novruz Bayram. Along with the New year and religious Ramadan, Bayram is one of the most important and popular holidays in Azerbaijan.
Although Novruz is mostly celebrated in Muslim countries, it is not a religious holiday, but, strictly speaking, the celebration of the vernal equinox, which symbolizes the renewal of all life on Earth.
Even in the old days People did not work for six days during Novruz, even the peasants did not carry out any agricultural work. The days of the holiday were given only to meetings and fun, and this tradition, which has taken roots in southern Azerbaijan is not violated today.
On the first day of Novruz it is customary to get up early. Where it's possible, people go to the pond or river: they wash, splash water on each other. After all, water symbolizes purification. Thus, everyone wishes each other a blessed and happy New year.
Then, according to the tradition, people treat each other with sweet things. On this day in the morning you have to eat something sweet, such as honey, or, if there's no honey, it is just some sugar. After that, they inhale the aromatic smoke, which symbolizes the liberation from "evil spirits".
Azerbaijanis also pay much attention to the preparation of the festive table on Novruz. According to customs, each family, covering the new year's feast, remembers that on the table there should be food consisting of seven dishes, the names of which begin with the letter "S". On the table should stand sumac, SCAD — milk, Sirkka — vinegar, seed, which is a special porridge made of wheat, sabzi — herbs and other dishes.
In addition to traditional dishes people put a mirror, a candle and a painted egg on the table. These objects have a deeply symbolic meaning: a candle is a light or fire that protects a person from evil spirits, a mirror is a sign of clarity or the establishment of the time of the new year.
In order to establish the end of the old year and the onset of the first day of the new year in Azerbaijan people put a painted egg on the mirror. And as soon as the egg swings, ('when the bull "throws" the globe from one horn to another horn') the New year comes. All guests, watching the symbolic rocking of the egg on the mirror, congratulate each other, kiss, hug and wish each other Happy New Year and all the best.
